Ahi Poke

This is a standard raw tuna (poke) salad served in most Hawaiian homes. Although unconventional, it is sure to please the more adventurous seafood lovers. Be sure to use fresh tuna for the very best flavor, although fresh frozen tuna will produce acceptable results.

Serves 4

8 oz. fresh sashimi grade ahi- fine dice
1 oz. fresh cured lemon-fine dice
2 oz. diced fresh fennel
2 oz. diced red onion
1 oz. lime oil
Hawaiian sea salt to taste

Cured Lemon- cut lemon in half and boil in water for 30 minutes, add kosher salt to cover lemon, chill . Combine all ingredients together and mix well, chill and garnish with sliced green onion and fennel top's.
