Almond Brioche French Toast

Ingredients:

1 Loaf of brioche or French bread cut into 2” slices
8oz. heavy cream
4 large egs
2oz. granulated sugar
1tbsp ground cinnamon
¼ tsp. nutmeg
1oz. brandy or cognac
2oz. unsalted butter
Sauce *

Procedure:

Beat the eggs and cream together until smooth. Then add the remaining ingredients and cream mixture, mix well.

Dip the sliced bread into the cream mixture allowing the bread to soak up the mixture.

Saute the soaked bread into cream mixture over a medium heat until brown using the unsalted butter.

Sauce*:

1 cup butter
1 quart cream
1 lb. Brown sugar
1 cup rum
1 tsp cinnamon
1 ½-2oz cornstarch

Brown the butter in a saucepot. Add sugar and cook for 1 minute.

Add cream, cinnamon and rum. Cook for 20 minutes at a low simmer.

Moisten cornstarch with water to form a paste; add to sauce to thicken, stirring constantly.

Cook 5 minutes.
