Chilled Asparagus with Kim Chee Cream

serves 4

20 ea peeled and blanched fresh asparagus
2 oz fresh micro greens
2 oz shredded carrot
1 oz lemon oil
Hawaiian sea salt
2 oz Kim chee cream

Kim chee cream-
1 pound cream cheese
1/4 cup mayonnaise
2 oz. Kim chee sauce
1 tsp. lemon juice
Whip cream cheese until smooth, add mayonnaise and blend well, do not over whip, this product will break. Fold in Kim chee sauce and add lemon juice, keep chilled.

Place asparagus on desired plate, top with micro greens and carrot, drizzle with lemon oil and sea salt, add Kim chee cream next to asparagus and serve chilled.
